U.S. shell eggs broken totaled 171 million dozen during March, down 5 percent from March 2011, but 3 percent above the 166 million broken in February, according to the latest U.S. Department of Agriculture report.
During calendar year 2012 through March, shell eggs broken totaled 507 million dozen, up slightly from the comparable period in 2011. To date, cumulative total edible product from eggs broken in 2012 was 662 million pounds, up slightly from 2011 numbers. Of that, 401 million pounds were whole eggs, 172.5 million pounds were egg whites and 88.6 million pounds were egg yolks.
