Brazil approves carcass washing for poultry processors

Carcass washing pre-chill to remove possible internal and external contamination with gastrointestinal contents from poultry carcasses at slaughter has been authorized by Brazil’s Ministry of Agriculture. The ministry has announced that any establishment wishing to use the process will have to have its hazard analysis and critical control point procedures revalidated and that washing does not remove the need for post mortem inspection.

The ministry has announced that any establishment wishing to use the process will have to have its hazard analysis and critical control point procedures revalidated and that washing does not remove the need for post mortem inspection. Neither can it be used to substitute other sanitary procedures for contamination. The new legislation lays down measurable parameters for monitoring of the procedure to ensure efficiency.
