U.S. pork production totaled 1.93 billion pounds in May, up 9 percent from 2011 numbers, according to the latest U.S. Department of Agriculture report. Hog slaughter totaled 9.28 million head, up 9 percent from May 2011.

Hog slaughter totaled 9.28 million head, up 9 percent from May 2011. Iowa contributed the largest number of slaughtered hogs to the total, with 2.46 million. North Carolina and Minnesota rounded out the top three, slaughtering 946,000 and 877,600 hogs, respectively. The average live weight was up 2 pounds from 2011, at 277 pounds.
