Shell eggs broken up slightly

But shell eggs broken in November were 13% below month-earlier levels, USDA reports.

Shell eggs broken totaled 160 million dozen during November 2008, up slightly from November a year earlier, but 13% below the 183 million broken in October, according to USDA’s December 31 Egg Products report. During calendar year 2008 through November, shell eggs broken totaled 1,885 million dozen, up 3% from the comparable period in 2007. To date, cumulative total edible product from eggs broken in 2008 was 2,465 million pounds, up 3% from 2007.

Looking at edible product from shell eggs broken in November versus the previous year, whole edible product was down 4%, white edible product up 3%, with edible egg yolk product up 19%.
