USPOULTRY to hold poultry processor workshop

USPoultry to hold upcoming poultry processor workshop.

USPOULTRY’s 2022 Poultry Processor Workshop will be held May 18-19 at the DoubleTree by Hilton downtown in Nashville, Tenn. The workshop keeps industry professionals informed about the latest technology, newest management techniques and current inspection issues to keep their plants running efficiently.

“The Poultry Processor Workshop will provide information that allows industry professionals to keep their plants running at optimum levels. We encourage everyone to attend,” remarked Marie Presley, QA manager at Fieldale Farms Corporation and program committee chairperson.

Program topics to be covered include Pre-Harvest Best Practices and Lessons Learned; a Practical Approach to Microbial Data Utilization and Quantification; PHIS: What Is It Good For?; Ready-to-Eat Validation on Cooking and Holding: Appendices A and B; Moisture Retention Calculations and What’s Coming Down the Pipe; Processing Plant New Employee Onboarding; Water Re-Use; and New Technology: Electronic Data Collection and Processing and Debone Equipment.

The agenda was developed by a program committee of plant managers and food safety and quality assurance professionals that includes Kelly Baker, Maple Leaf Farms; Juanfra DeVillena, Wayne Farms LLC; Scott Fawley, Pilgrim’s; Bruce Ford, Pilgrim’s; Alison Griffino, Tyson Foods, Inc.; Corbett Kloster, Fieldale Farms Corporation; Hunter Miller, Peco Foods, Inc.; and Marie Presley, Fieldale Farms Corporation and program committee chairperson.
