Bulgaria, Hungary stepping up foie gras production

Still far from catching up with France

Competitive feed prices and relatively low wages have protected Bulgarian and Hungarian foie gras producers from market vagaries, according to a recent Agence France Presse article in The Straits Times of Singapore. After France, Bulgaria is the world’s second largest duck foie gras producer, with a projected output of 2,100 metric tons to 2,200 metric tons in 2009.

Hungary is the world’s major producer of goose foie gras, the article states, putting production at 1,800 tons of goose foie gras and 800 tons of duck foie gras this year.

France produces about 20,000 tons of foie gras each year, although demand and production fell in 2009 because of the economic crisis, the article states. Bulgaria’s production, on the other hand, is expected to rise 5% to 10% this year.
