A growing number of foodservice chains are positioning chicken over beef as the star of their menus.

“Right now, in foodservice and retail there’s a tremendous incentive to feature chicken because beef is so expensive,” said David Maloni, foodservice supply chain analyst and president of Datum FS. “And I think that you will feel that over the next several months and probably for the next couple of years.”

At the 2023 Chicken Marketing Summit, Maloni will discuss the market drivers that will shape foodservice chicken demand for the rest of 2023 and beyond/

Opportunities for chicken supplies

This price incentive is a major opportunity for chicken suppliers to partner with foodservice buyers that historically haven’t made chicken a central part of their menus, whether it’s a hamburger chain looking to compete in the chicken sandwich wars or a chain that’s never had chicken wings before.

“I think there will be a lot of opportunities for suppliers to partner with the right customers, particularly foodservice that has a heavy beef presence,” Maloni added.

Chicken in foodservice thrived over the past few years following the 2019 viral craze nicknamed the chicken sandwich wars. Chicken sandwiches continue to be popular with consumers, but other innovation in chicken – including nuggets – have also emerged.
