More and more lab-grown, or cultivated, meat companies are stepping into the market, and Chicago-based startup, Clever Carnivore, has hired former Tyson Foods executive Russell Thomas to help develop their first product, the Clever Bratwurst.

“Russell’s experience as director of research and development at Tyson is a huge asset to Clever Carnivore as we aim to unveil our prototype product later this year,” said Clever Carnivore CEO Virginia Rangos, Ph.D.

Russell Thomas’ over three decades in the poultry industry

Thomas spent over 33 years in food science and research and development at Tyson as well as most recently serving as VP for a Silicon Valley-based cultivated fat company. And with degrees in animal science, business, and poultry science and product technology, Thomas will be well equipped for this new project.

“I’m excited about joining Clever Carnivore. I entered the food industry more than three decades ago because I believe there’s no greater way to serve humanity than by working to provide accessible, sustainable food to people,” said Thomas. “The technology being developed by Clever Carnivore aligns with that mission.”
