Eggs are expected to have a “moment” in 2025

Shell eggs are predicted to experience a resurgence on restaurant menus due to their versatility and familiarity.

While chicken has been the most popular protein choice for consumers in past years, research and consulting company Technomic believes that 2025 will be the year that eggs take the center stage.

As told in the company’s “What will thrive in 2025” webinar, eggs are inspiring culinary creativity across various dishes, and even causing an increase in sales of certain ingredients that pair well with eggs. Technomic mentioned ingredients such as Asian sesame sauce and Gochujang (a savory, sweet, and spicy fermented condiment) in bowls or salads and French creme fresh to elevate eggs in dishes like avocado toast.

Additionally, the company believes that eggs will be found more in unlikely dishes in 2025.

For example, West Virginia-based restaurant 1010 Bridge offers salted and cured egg yolk in a cocktail while Milwaukee-based restaurant EsterEv pairs cured egg yolks with pasta.

Egg salads are also experiencing a culinary revival, the company explained, as upscale takes of classic egg salads and egg salad sandwiches can be found in multiple restaurants across the U.S.

The company noted that some vegan interpretations that would normally feature eggs have been made as well, such as an egg salad made with chickpeas at Michigan based restaurant Authentic Baking Co.

Eggs and social media

Like the past couple of years, social media trends will continue to drive egg innovation and consumption.

During the pandemic, trends involving eggs, such as cloud eggs and egg boils, captured some consumer attention, and now egg flights on TikTok are growing in popularity quickly, which involves hard boiled eggs with creative toppings such as kimchi, pulled pork or jalapenos.

As consumers continue to experiment with eggs at home, the company said, the industry should expect more egg inventions to make their way onto restaurant menus in 2025.

It is nice to see eggs being used in more creative ways. While a cocktail featuring cured egg yolk is intriguing to me, I am still a big fan of plain scrambled eggs.
