The 2009 Poultry Processor Workshop, sponsored by the U.S. Poultry & Egg Association, addressed food safety initiatives along with the current and future industry economic trends.
Michael Kowalcyk from the Center for Foodborne Illness Research & Prevention discussed "Consumer Expectations for Food Safety in the 21st Century" and emphasized the need for planning ahead, analyzing and predicting the results, executing the plan in controlled circumstances and taking action to control foodborne illnesses.
Dr. Isabel Arrington, scientific adviser to the policy development divison of the USDA Food Safety & Inspection Service, participated in a panel discussion on FSIS initiatives and discussed its salmonella risk management practices.
Brian Coan, senior purchasing supervisor, Chik-fil-A, Atlanta, said the company expects processing plants to have the latest equipment and meet consistent job procedures.
