Kinematic enhancement for in-line, immersive chilling
Comas Haynes, faculty, Georgia Tech Research Institute, will share information on a system and method for rotation and holding-in-place of poultry carcasses in shackle device comprising a modified shackle that can be used to transport, counterrotate and hold-in-place during processing (including thermal treatment such as chilling).
The modified system adds rotational kinematics to the traditional translational motion by way of a secondary roller chain-sprocket arrangement in addition to retractable middle bar to hold the product in place.
The adoption of an additional velocity component via superimposed rotational patterns synergistically increases the heat sink effect, hence viability, of in-line immersive chilling.
Hyperspectral imaging to assess quality in poultry processing
Food processors are under tremendous pressure to produce higher quality food, in higher volume, while ensuring that it is safe to eat. Unfortunately, recalls due to the presence of foreign objects are frequent and can be costly.
On top of this, food quality issues like woody breast are increasing and are incredibly difficult to address in the high-volume environments of poultry processing plants.
