Active live yeast could aid Salmonella prevention in poultry

The feed additive can also boost gut health.

Adding a type of active live yeast called Saccharomyces cerevisiae boulardii to poultry diets can reduce the incidence of Salmonella and other food safety pathogens, as well as improve bird intestinal health and maturity.

“It has multiple methods to help reduce Salmonella. Some of these include the sequestration of oxygen in the intestine, limiting the adherence of pathogens in the intestinal tract and creating attachment sites of the pathogen flagella to the yeast,” said Bill Potter, Ph.D., food safety technical advisor, Elanco.

At the 2023 Poultry Tech Summit, Potter will discuss the potential benefits of using active live yeast cultures in broilers, breeders and layers.

Preharvest Salmonella interventions

Salmonella in poultry is under intense scrutiny right now. In the Fall of 2022, the U.S. Department of Agriculture (USDA) Food Safety and Inspection Service (FSIS) unveiled a proposed framework to improve Salmonella control in poultry products, with an emphasis on pre-harvest interventions.

Active live yeast could play a crucial role as part of a multi-hurdle food safety strategy to address USDA’s Salmonella initiative pre-harvest, Potter explained.

Preliminary research revealed that active live yeast supplementation can reduce Salmonella colonization in poultry ceca and other internal organs, in addition to breast skin, neck skin and feces.
